With all the Halloween festivities we’ve been attending this month our kids are all sugared out and the 31st hasn’t even arrived yet! Here is a pretty healthy and festive Halloween lunch that is low on sugar, but not on fun. Our kids are still talking about this lunch and there wasn’t a single fun-size candy bar for miles!

1. Cemetery Seven Layer Dip
2. Mummy open-faced broiled turkey and cheese sandwich.
3. Spider web tomato soup.
4. A beaker of toxic eye-balls to drink.
1. For the seven layer dip, using a regular pie plate Emily layered refried beans, sour cream (mixed with taco seasoning), cheese, lettuce, tomatoes, taco sauce, and guacamole on top. She used an off-set spatula to give it the smooth finish.
Then bringing a large sauce pan of vegetable oil up to a medium-high heat, she fried tortillas cut into headstone shapes and other spooky things like a dead tree and a hissing cat. The longer you leave the tortillas in the darker they get, so you can play with it to get different colors. She cut out crosses and messages in the headstones for an extra special touch.
2. The mummy sandwich is made simply by covering one slice of whole wheat bread with cheddar cheese and then slicing turkey or ham into one inch strips. Place the turkey and ham over the cheese leaving spots for the pomento olive eyeballs. Put the open faced sandwiches under the broiler for a few minutes to melt the cheese and warm the meat. Take them out of the oven and add the olives!
3. You can dip your sandwiches into this standard tomato soup! To get the spider web design, fill a sandwich bag with a 1/4 cup of sour cream. Push the cream all the way to one of the bottom corners and then snip the smallest little tip off the bag. Guide and squeeze the bag in three concentric circles (like a target) and then take a clean knife and drag the tip of it from the middle of the circle outward, the same way you would slice a pie. The knife will drag the sour cream out ward and into itself creating your spider web!
4. This juice isn’t super healthy, but we used a store bought Tampico lime drink and added peeled green grapes to make it extra eerie looking. This was by far the kids favorite.

I’ve been celebrating Halloween with kids since 1976 and haven’t EVER seen these ideas before despite all the Family magazines I’ve perused over the years. This beats dinner in a pumpkin for ease, eatability, and eeriness! Smallfry’s creativity continues to amaze me, girls!

October 24, 2012 at 1:49 pmAnother idea for the spider soup: take tiny uncooked meatballs and put spaghetti through them (broken in little pieces). Let it cook a few minutes with the soup. They will look like little spiders in the soup. Instant hit with my daughter.
