What a better time to try out this Sweet Corn Pizza that’s been on my mind! I used Full Circle’s Gluten Free Pizza Dough Mix and honestly I am so so impressed. I had super low expectations for this dough being Gluten Free, and it was so delicious! The batter looks like cake but ends up crunchy and crispy on the edges, and soft and chewy in the middle. They tout that you don’t need sauce for their dough and I wasn’t sure, but they’re right! It’s so good plain with whatever toppings you like!

As per the recipe I used for the salad I added feta, sweet corn (Full Circle sells whole kernel corn frozen, or you can do fresh, too!) olive oil, cherry tomatoes and cilantro! It’s fresh, sweet, acidic and that salty feta cuts through everything so nicely!  Sweet Corn Pizza
