street corn / elote

Made this last night on the Traeger using their recipe (their app is so clutch, I use it all the time for recipes!) and it was some of the best corn I’ve had maybe ever. Just wanted to share now that we’re crossing over into corn season!!

Street Corn / Elote Recipe

I used a Costco 6 pack of corn cobs, 1/4 c of mayo (they recommend mixing in 1 T. of ancho chile spice, but I think Trader Joe’s chili lime, or any other chili pepper spice would work great!) 1/2 cup of cotijia cheese, 1/2 c of chopped cilantro, 1 lime (juice and zest) – I used 2. Mix the mayo, chili, cilantro, lime juice and zest so it sticks nicely to the corn, and then top with cheese and more of the rest of the ingredients so you can see the pretty textures, too!

ON A TRAEGER:

Start the Traeger grill on smoke with the lid open until fire is established (4-5 minutes). Set the temperature to high and preheat, lid closed, for 10-15 minutes.

Brush corn with oil and grill, turning occasionally.

After about 10 min corn should be cooked through and slightly charred on the outside.
